Lunch
Half of a tuna sandwich, 1/2 cup cottage cheese, wheat thins, a pickle on the side and a fruit salad. Love this lunch, it's perfect amount of protein and fruit.

Nick's pizza
Nick loves to make pizza. Sometimes we make it from scratch, but this time we bought a frozen cheese pizza and added our own veggies. This is one of our weekend go-to meals, easy, affordable and delicious!

Vegetarian pasta
I usually start my dinners off by chopping onion and garlic and putting them in the saucepan with a little olive oil. After this, I add my veggies then any seasoning of your choice.
One head of chopped cauliflower (always start with the vegetable that takes longest to cook)
Chopped zucchini goes great on pasta
Mushrooms make everything better.
Tomatoes are always last because they cook so fast.
I added sliced almonds for a little more protein

Stuffed bell peppers
Nick and I are trying to incorporate more veggies in our meals, especially dinner. Last night we had stuffed bell peppers. I mixed a cup of cooked quinoa with a melody of cooked vegetables, and black beans. Then I stuffed the peppers (after I cut the tops off and clean out the inside) and put them in the oven on 350* for 20 minutes. So easy, very filling and delicious!

Cut up raw veggies, drizzle olive oil, sprinkle with sea salt and put in oven on 350* for 20-30 minutes. After done cooking add feta, goat cheese (or cheese of your choice) over the top. Enjoy!!

MENU:
Green salad with corn, black beans, hard boiled egg, carrots, and tomatoes. Balsamic vinaigrette dressing.
Veggie burger (grilled in oven) on top of (half) an english muffin.
Ketchup and mustard on bun.
The one thing missing tonight was avocado!! I would have put avocado in the salad and on top of the burger. Darn it!
Oh well, next time!

On the menu:
Steamed artichokes
Quinoa with zucchini, onion, and mushrooms sauteed in sesame teriyaki sauce (high in sodium so used just a smidge)
Tomato sprinkled with sea salt
